Yesterday, we talked about the record number of device activations that occurred on Christmas Day, which was immediately followed by a record breaking number of apps being downloaded. I think it’s safe to say that tablets were the ultimate Christmas gift this year, but I’ll go a step father: tablets go beyond the holiday and are the best gift you can get anyone, ever. Period.

Remember how the Kindle Fire was going to be the tablet of the 2011 holiday season? Well, Barnes and Noble has stepped up to the plate and introduced their RoboCop to Amazon’s ED-209. The Nook Tablet was unveiled today (it goes on sale next week) and it looks like it was specifically designed to directly compete with (and crush) Amazon’s new baby. Considering how well the Nook Color has done, Amazon is definitely going to have a fight on their hands, even with a brand as consistently strong as the Kindle.

The Nook Tablet resembles the Nook Color, but it’s thinner and lighter. The innards sport 1GB of RAM, 16GB of hard drive space and a dual-core 1GHz processor. Then there’s the micro SD slot that can support a 32GB card. On top of all of the hard drive space, the tablet will have full access to the Nook Cloud and will support Android apps. Oh, and unlike the Kindle Fire, the Nook Tablet will feature full 1080p video, including Hulu Plus and Netflix. Amazon may have a cool reader on their hands, but Barnes and Noble are presenting a device that looks more like an Android equipped iPad than anything else.

How much does Sprint have invested in the iPhone? How about everything. They’ve officially signed on the dotted line that requires them to purchase $20 billion worth of iPhones, which amounts to about $30.5 million individual units. That’s an incredibly risky deal for a company that only has 27 million subscribers. Is the iPhone popular enough to win over the majority of their user base? Will their new perks, including an unlimited data plan, steal AT&T and Verizon iPhone users? This will be the deal that saves Sprint or breaks it. Grab some popcorn.

Pinterest is an invite-only, beta social network that currently has 1.5 million users, so it’s doing something right. It bills itself as a “virtual pinboard”, letting you post and collect images in any way you choose, whether it be professionally or personally. It looks ready to explode into something big, so make sure you jump on now so you can say you were there before everyone else!

Japan is beating us, guys. They have not one, but two smartphone-exclusive television stations, the latest of which is called Nottv. What places this new arrival above the competition? You can post and share responses to what you’re watching with other viewers. Hey, Obama, forget about the economy. Use that executive power of yours to bring smartphone television to these shores!
